The Perfect Pie (sugar, guilt and stress free)
I don’t know about you, but I love sugar and I hate every single thing it does to my body. Between the achy joins, the few extra pounds, my lowered immune system, and the way I stalk my chocolate every afternoon around 3pm, I know it’s NOT worth it! I always feel my best and look my best when I’ve kicked this bad habit, but there are still those times when I want/need/must have or I will kill someone, a sweet treat. Luckily, I have amazing friends and one of those friends created this recipe for my birthday a few years ago. Not only did she save my birthday, but we could go so far as saying that she saved my life…well at least my overall mood and happiness!
So here it is guys! Enjoy!!!
Leanne’s Apple Pie
Apple Pie Filling:
- 6 apples cored, peeled, sliced into small pieces. (I’m always to lazy to peel the apples and I use my chopper to chop them for me as well…works like a charm)
- juice of 1 lemon
- 2 tsp cinnamon
- 1/4 tsp nutmeg
- 6-10 drops of stevia until desired sweetness or 2 tbsp of honey
- 2 cups pecans
- 1 cup pitted dates
- 2 tsp cinnamon
- 4 tsp coconut oil
Place the apple mixture in a small pan, with the lid on and allow it to simmer over low heat, until the apples get soft and syrup like. It usually takes around 30-40 mins.
***Leanne cooks her apples in her crockpot, over low heat and she has been known to bring her crockpot over to parties, so that we can all enjoy this deliciousness warm. I don’t have a crockpot, so cooking the mixture over the stove has been great as well.
For the crust, blend all the ingredients in a food processor. Spoon the crust mixture into small mason jars and then top with the pie filling. I also pour a little cold hemp milk over the top when I serve them, since it’s as close to ice cream as I get these days. Yum!
The other day I subbed out the apples for peaches and came up with this deliciousness!
Peach Pie Filling:
- 6 peaches, sliced into small pieces
- 1 tsp cinnamon
- 6-10 drops stevia or 2 tbsp honey
- 4 tbsp water
- 1 tbsp coconut oil
Same instructions as above and the same crust recipe.
