Southwest Black Bean Quinoa Salad

This is a super easy, nutritious, and delicious salad to meal prep on Sundays, or to bring to your next potluck. It’s always a crowd favorite and my kids love it, so it works for us as a family always on the go. Between the heart healthy, brain boosting olive oil, to the delicious spices, the protein packed quinoa, and fiber in the black beans, it’s a perfect meal! I hope that you guys enjoy this as much as we do.

Southwest Black Bean Quinoa Salad

Serves 8

Dressing Ingredients

  • 2 Tbs. fresh lime juice
  • 3 Tbs. white balsamic
  • 2 Tbs. minced fresh cilantro
  • 1/4 tsp. cumin
  • 1/4 tsp. dried oregano
  • 1/2 tsp. salt
  • 1/2 tsp. freshly ground pepper
  • 1/2 cup olive oil

Salad Ingredients

  • 1/2 cup quinoa
  • 1/4 tsp. salt
  • 1 can of whole black beans
  • 2/3 cup of corn
  • 1 tomato, seeded and finely diced
  • 1 small red bell pepper diced
  • 1 small white onion diced
  • 1 small piece of garlic diced

1. Combine all the dressing ingredients and whisk, or blend together until emulsified.

2. Prepare quinoa as directed on packaging. Once the quinoa is cooked, transfer it to a colander and rinse with cold water. Drain all of the water and then place your quinoa in a big bowl.

3. Add in remaining ingredients and stir to mix well. Once the salad is mixed, pour on your dressing and mix again to incorporate all the deliciousness.

See…super easy! We will throw this in a large glass container and eat off of it throughout the week. It’s great as a side accompanying tacos, or over romaine lettuce with a little extra white balsamic, or as tacos served in romaine lettuce shells, for my vegan friends, or cold straight out of the container as a quick breakfast.
