Coconut Berry Parfaits

July is such an amazing month in the Howard household and we love the longer summer nights. Add in the extra time we have to play with our friends, BBQ’s, pool parties, and the endless amount of memories we create with these little get togethers; it’s easy to see why there’s so much to be grateful for. This July 4th is sure to be another fun filled family event and here’s the sweet, healthy treat that my kid’s and I will be whipping up.

Coconut Berry Parfaits 

Ingredients:

  • So Delicious CocoWhip
  • Organic Blackberries, Strawberries, Raspberries and Blueberries
  • 1 Tbsp. Vanilla Bean Paste
  • Lucy’s Lemon Goodness gluten-free cookies (purchased from Whole Foods, or amazon)

Instructions:

  1. Thaw the CocoWhip as instructed, and then stir in 1 Tbsp. of Vanilla Bean Paste.
  2. Wash the berries, dry on a paper towel and then set them in a separate bowl.
  3.  Take 4 Lemon Goodness cookies, place them in a zip lock bag and smash them until they are mostly crumbs. (You can also pulse them in your mini food processor).
  4.  Grab 6 small glasses that you can use to fill up all this deliciousness. Set up a little assembly line, have fun with it, and put your kids to work. We did about 1 Tbsp. of berries, a little sprinkle of cookie crumbs, then 1 Tbsp. of CocoWhip and we repeated that process until our glasses were full.

*** You do want to try to eat these within the hour after you make them, because the CocoWhip starts to get a little watery…still delicious, but not as pretty looking.
